  • 1 cup canned pumpkin puree
  • 1/2 cup honey or maple syrup
  • 1/2 cup nut butter (almond or peanut)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, honey or maple syrup, and nut butter until smooth.
  4. Combine the wet and dry ingredients until fully mixed.
  5. Spread the mixture evenly in the prepared baking dish and bake for 25-30 minutes until golden brown.
  6. Allow to cool for at least 10 minutes before slicing into squares.
