  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 4 oz cream cheese, softened
  • 1 large egg
  • 1/2 cup unsalted butter, melted
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • 1/2 tsp baking soda
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix pumpkin puree, brown sugar, and melted butter until smooth. Add the egg and mix well.
  3. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and ginger. Gradually combine with the wet ingredients until just mixed.
  4. In a small bowl, beat cream cheese with powdered sugar until smooth.
  5. Scoop tablespoon-sized portions of dough onto the baking sheet; press a dollop of cream cheese filling into the center of each mound and cover with more dough.
  6. Bake for 12-15 minutes until golden at the edges. Let cool on wire racks before serving.
