  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

  • 2 large eggs
  • 1 cup canned pumpkin puree (100% pure)
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and cloves.
  3. In another bowl, mix pumpkin puree, eggs, and vanilla extract until smooth.
  4. Gradually combine wet and dry mixtures until just combined.
  5. For the cream cheese filling, beat softened cream cheese with one tablespoon of sugar until creamy.
  6. Spoon about two tablespoons of batter into each liner. Add one tablespoon of cream cheese filling in the center and top with more batter until two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean from the center. Let cool completely before frosting.
