  • 4 large eggs
  • 1 cup whole milk (or non-dairy substitute)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz feta cheese, crumbled
  • 2 tsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish with olive oil.
  2. In a skillet over medium heat, sauté chopped onions and minced garlic in olive oil until soft (about 5 minutes).
  3. Add fresh spinach with a pinch of salt and cook until wilted (approximately 2 minutes).
  4. In a bowl, whisk together eggs and milk; season with oregano, salt, and pepper. Stir in the sautéed mixture along with crumbled feta.
  5. Pour mixture into the prepared baking dish. Bake for 30–35 minutes or until golden brown on top.
  6. Allow to cool slightly before cutting into squares and serve warm or at room temperature.
