  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced (mixed colors)
  • ½ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 2 tsp Dijon mustard
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and toss with a bit of olive oil to prevent sticking.
  2. While the pasta cooks, chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.
  4. In a large bowl, combine the cooked pasta and chopped vegetables. Pour the dressing over and mix until evenly coated.
  5. Gently fold in the crumbled feta cheese.
  6. Chill in the refrigerator for at least one hour before serving.
