  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 2 tsp pure vanilla extract
  • 2 cups assorted fresh fruits (e.g., strawberries, kiwi, blueberries)
  • 1 tbsp gelatin (optional for glaze)

Instructions

  1. Preheat oven to 375°F (190°C). Roll out the pastry dough into a tart pan and trim excess dough.
  2. Blind-bake the shell with parchment paper and weights for 15 minutes, then remove weights and bake for another 5 minutes until golden.
  3. In a saucepan, heat milk and half of the sugar until simmering. Whisk egg yolks with remaining sugar until pale, then gradually mix in hot milk.
  4. Return mixture to saucepan over low heat; stir until thickened (5-7 minutes). Remove from heat, stir in vanilla extract, and cool.
  5. Fill the cooled tart shell with pastry cream. Arrange fresh fruits artistically on top; optionally brush with warmed gelatin for shine.
  6. Chill before serving; enjoy!
