  • 34 lbs chuck roast
  • 3 medium yellow onions, sliced
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, sear the chuck roast over medium-high heat for 4-5 minutes on each side until browned. Remove the roast and set aside.
  3. Add sliced onions and minced garlic to the pot; sauté for 10-15 minutes until golden brown.
  4. Pour in the beef broth, add thyme and bay leaves, then return the roast to the pot.
  5. Cover and slow cook in the oven for about three hours or until fork-tender.
