  • 6 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 medium onion, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil and sauté the onions until translucent. Add diced zucchini and cook until softened, about 5-7 minutes.
  3. In a mixing bowl, whisk together eggs, salt, pepper, and half of the cheese until well combined.
