Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Sauté onions and bell peppers until softened (approximately 5 minutes).
  3. Add spinach and cook until wilted (about 2 minutes).
  4. In a bowl, whisk eggs with salt and pepper. Pour over the sautéed veggies in the skillet.
  5. Sprinkle cheese on top and let it cook undisturbed for about 5 minutes until edges set.
  6. Transfer the skillet to the oven and bake for about 20 minutes until puffed and set.
  7. Allow to cool slightly before slicing and serving warm.
