  • 1 cup cherry tomatoes, halved (150g)
  • 1 medium onion, finely chopped
  • ½ cup crumbled feta cheese (75g)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a large sheet pan with nonstick cooking spray.
  2. In a skillet over medium heat, add olive oil. Sauté chopped onion until translucent, then add spinach until wilted.
  3. In a bowl, whisk together eggs, salt, and pepper until frothy.
