  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 8 oz pasta (spaghetti or penne)
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by mincing garlic and grating parmesan cheese.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper; cook for 6-7 minutes per side until golden brown. Remove from skillet and let rest.
  3. In the same skillet, sauté minced garlic for about one minute until fragrant.
  4. Pour in heavy cream and soy sauce; stir to combine, adding half of the grated parmesan cheese until melted.
  5. Slice the rested chicken into bite-sized pieces; return to skillet along with cooked pasta. Toss until well coated in sauce.
  6. Serve garnished with remaining parmesan cheese and fresh parsley.
