  • 1 lb ribeye or sirloin steak
  • 1 lb baby Yukon Gold or red potatoes
  • 4 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh rosemary or thyme, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Wash and cut the potatoes into halves or quarters. Toss in a bowl with 2 tbsp olive oil, salt, pepper, and half of the fresh herbs until well coated.
  3. Spread the potatoes in the baking dish and roast for 25–30 minutes until golden brown.
  4. Heat remaining olive oil in a skillet over medium-high heat. Season the steak with salt and pepper, then sear for about 3 minutes on each side for medium-rare.
  5. Add minced garlic and remaining herbs to the skillet during the last few minutes of cooking, allowing flavors to meld.
  6. Serve steak alongside roasted potatoes, drizzling any pan juices over both.
