Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and a pinch of salt; set aside.
  3. In a large mixing bowl, cream softened butter and sugar until light and fluffy (about 3 minutes).
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Scoop tablespoonfuls of dough onto prepared baking sheets, spacing them apart. Bake for about 10 minutes or until lightly golden.
  7. Allow cookies to cool completely before decorating with icing made from powdered sugar mixed with water/milk; add chocolate chips for eyes.
