  • 1 cup brown sugar
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp espresso powder
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and brown sugar until fluffy. Add eggs one at a time followed by vanilla extract.
  3. In another bowl, whisk together flour, ground ginger, cinnamon, espresso powder, and salt. Gradually add this dry mixture to the wet mixture until just combined.
  4. Using a cookie scoop or spoon, drop tablespoon-sized portions of dough onto prepared baking sheets about two inches apart.
  5. Bake for 10-12 minutes until golden around the edges but soft in the center. Allow to cool on the baking sheets for five minutes before transferring to wire racks.
