  • 1 cup powdered sugar (120g)
  • 2 large egg whites (approximately 60g)
  • 1/4 cup granulated sugar (50g)
  • 1 tsp ground ginger (2g)
  • 1 tsp ground cinnamon (2g)
  • 2 tbsp molasses (30g)
  • 1 tsp vanilla extract (5ml)

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a clean bowl, whisk egg whites until frothy. Gradually add granulated sugar and whip until stiff peaks form.
  3. Sift together almond flour, powdered sugar, ginger, and cinnamon into another bowl.
  4. Gently fold the dry mixture into the meringue, adding molasses and vanilla until just combined.
  5. Transfer batter to a piping bag and pipe small circles onto prepared baking sheets. Tap gently to release air bubbles.
  6. Bake for 15-20 minutes or until firm to touch. Allow cooling completely before filling.
