  • 1 cup water

Instructions

  1. Zest and juice the grapefruits to yield about 2 cups of juice, straining out any seeds.
  2. In a medium saucepan over medium heat, combine grapefruit juice, sugar, and water. Stir until sugar dissolves (about 5 minutes).
  3. Remove from heat and let cool slightly before stirring in Campari.
  4. Pour the mixture into a shallow dish and freeze for one hour.
  5. Stir with a fork to break up ice crystals, then return to the freezer for at least three more hours until fully frozen.
  6. Serve in chilled bowls or glasses, garnished with extra grapefruit zest or fresh mint if desired.
