  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 2 cloves fresh garlic, minced
  • 1 can (4 oz) green chilies
  • 1/4 cup fresh cilantro, chopped
  • 6 large flour tortillas
  • 1 cup green salsa
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Boil chicken breasts in salted water for about 15-20 minutes until fully cooked. Shred the chicken using two forks.
  3. In a mixing bowl, combine shredded chicken with minced garlic, chopped cilantro, green chilies, salt, and pepper.
  4. Spoon filling onto each tortilla and roll tightly. Place seam-side down in the baking dish.
  5. Pour green salsa over the enchiladas and top with shredded cheese.
