  • 12 oz Italian-style chicken sausage
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups fresh spinach
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 oz cream cheese (low-fat optional)
  • 1 cup low-sodium chicken broth
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Chop the chicken into bite-sized pieces and slice the chicken sausage into rounds.
  2. Heat olive oil in a large skillet over medium heat. Add chicken pieces and season with salt and pepper; sauté until golden brown (about 6 minutes).
