  • 4 large bell peppers (any color)
  • 1 lb lean ground turkey
  • 1 cup canned black beans (rinsed and drained)
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Fresh cilantro for garnish
  • Sour cream for serving

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the tops off the bell peppers, remove seeds, and place them upright in the dish.
  3. In a skillet over medium heat, cook ground turkey until browned. Add onion, garlic, black beans, quinoa, tomatoes, cumin, chili powder, salt, and pepper. Cook for about 5 minutes until heated through.
  4. Generously stuff each pepper with the filling.
  5. Cover with foil and bake for 25 minutes; then remove foil, top with cheese, and bake uncovered for an additional 10 minutes until melted.
  6. Remove from oven and let cool slightly before serving with cilantro and sour cream.
