  • 1 medium onion, diced
  • 1 cup bell peppers (red or yellow), chopped
  • 1 can (14.5 oz) diced tomatoes, no-salt-added
  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn (frozen or canned)
  • 2 tsp taco seasoning
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese, softened
  • Juice of 1 lime

Instructions

  1. 1. Prep Ingredients: Dice the onion, garlic, and bell peppers.
  2. 2. Sauté Base: In a large pot over medium heat, add olive oil and sauté onions and garlic for three minutes until fragrant. Add bell peppers.
  3. 3. Add Chicken & Spices: Add chicken breasts and taco seasoning to the pot; cook until browned on all sides (about five minutes).
  4. 4. Pour In The Goodness: Stir in diced tomatoes, black beans, corn, and chicken broth.
  5. 5. Simmer & Stir: Bring to a boil, reduce heat, and simmer for about 20 minutes or until chicken is cooked through.
  6. 6. Finish Strong: Remove the chicken, shred it with forks, return to the pot along with cream cheese. Stir until combined and creamy.
