  • 1 cup freshly grated Parmesan cheese (divided)
  • 2 large eggs
  • ½ cup whole wheat bread crumbs
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a large bowl, combine sliced zucchini, eggs, half of the Parmesan cheese, bread crumbs, garlic powder, salt, and pepper. Mix until well-coated.
