  • 4 large Russet or Yukon Gold potatoes (about 2 lbs), peeled and thinly sliced
  • 1 medium sweet onion, chopped
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a baking dish with non-stick cooking spray.
  2. In a large bowl, season the sliced potatoes with salt and pepper.
  3. In a skillet over medium heat, melt butter and sauté chopped onions until golden.
  4. Layer half of the potatoes in the baking dish, followed by half of the onions and half of the cheese. Repeat the layers.
  5. Pour heavy cream over the top layer of potatoes.
  6. Cover with foil and bake for 45 minutes; remove foil for the last 10 minutes to brown the cheese.
