  • 4 cups low-sodium vegetable broth
  • 2 tsp dried oregano
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, celery, and carrots until tender (about 5 minutes).
  2. Add minced garlic and cook for an additional minute.
  3. Stir in diced tomatoes and drained cannellini beans.
  4. Pour in vegetable broth and add dried oregano. Bring to a gentle boil.
  5. Lower the heat and let it simmer uncovered for 20 minutes.
