  • ½ lb Italian sausage (mild or hot)
  • 1 cup chopped fresh parsley
  • 4 cups baby spinach
  • 2 medium carrots, diced
  • 8 cups low-sodium chicken broth
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the meatballs: In a large bowl, mix ground beef, Italian sausage, parsley, garlic, salt, and pepper until just combined. Roll into bite-sized balls.
  2. Sauté veggies: Heat olive oil in a large pot over medium heat. Add diced onions and carrots; cook until softened (about 5 minutes).
  3. Brown the meatballs: Add meatballs to the pot; cook until browned on all sides.
  4. Add broth & spinach: Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes. Stir in baby spinach during the last five minutes.
  5. Season & serve: Taste and adjust seasoning if needed. Ladle into bowls and garnish with extra parsley.
