  • 1 lb ground beef (or turkey)
  • 1 cup fresh spinach (or kale)
  • 1 cup diced carrots
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for browning

Instructions

  1. In a large bowl, combine ground meat, breadcrumbs, egg, garlic, onion, and Italian seasoning to form small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Brown meatballs for about 5 minutes until golden but not fully cooked; remove and set aside.
  3. In the same pot, sauté diced carrots for 3 minutes until softened. Add spinach or kale and cook until wilted.
  4. Pour in chicken broth and bring to a boil. Return meatballs to the pot; cover and simmer on low for 15 minutes.
  5. Season with salt and pepper to taste before serving hot.
