  • 3 lbs boneless chuck roast
  • 4 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • ½ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 2 tbsp sesame oil
  • 1 large onion, diced
  • Salt and pepper to taste
  • 2 tbsp vegetable oil for searing

Instructions

  1. Preheat oven to 325°F (163°C). Heat vegetable oil in a Dutch oven over medium-high heat.
  2. Sear the chuck roast on all sides until browned; remove and set aside.
  3. In the same pot, sauté diced onions, garlic, and ginger until fragrant (about 3 minutes).
  4. Return the roast to the pot. Whisk together soy sauce, brown sugar, sesame oil, and pour over the roast.
  5. Cover tightly and cook in the preheated oven for about 3 hours until fork-tender.
  6. Serve sliced or shredded alongside rice or vegetables.
