  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth
  • 2 medium fresh lemons (juiced)
  • 2 tbsp olive oil
  • 3 garlic cloves (minced)
  • 2 cups fresh spinach or kale
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Stir in orzo pasta, chicken broth, dried oregano, salt, and pepper. Bring to a gentle boil.
  4. Place salmon fillets on top of the orzo mixture and drizzle with fresh lemon juice. Optionally sprinkle extra oregano.
  5. Transfer the skillet to the oven and bake for 15-20 minutes until the salmon flakes easily with a fork.
