  4. Roll out chilled dough to 1/8-inch thickness on a floured surface. Cut into shapes—one solid for the base and another with a cut-out center.
  5. Bake cookies for 10-12 minutes or until lightly golden around edges. Cool completely before assembly.
  6. Spread raspberry jam on each solid cookie base and top with cut-out cookies. Dust with powdered sugar before serving.
