  • 3 medium Russet potatoes (about 1.5 lbs), peeled and diced
  • 4 strips thick-cut bacon, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped for garnish

Instructions

  1. In a large pot over medium heat, cook the diced bacon until crispy. Remove and set aside, leaving drippings.
  2. Sauté the chopped onion and minced garlic in the bacon fat until tender and fragrant.
  3. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat to simmer for 15-20 minutes until potatoes are tender.
  4. Use an immersion blender to partially puree the soup for a creamy texture while keeping some chunks intact.
  5. Stir in heavy cream, cheddar cheese, and half of the crispy bacon. Warm through before serving.
  6. Top each bowl with remaining bacon bits and chopped green onions.
