  • 1 lb ribeye or sirloin steak
  • 4 medium-sized russet potatoes (about 2 lbs)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 4 green onions, chopped
  • Salt and pepper to taste
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Thinly slice russet potatoes (about 1/8 inch thick) and season with salt and pepper.
  3. In a skillet, sear steak over medium-high heat for about 4 minutes per side until medium-rare. Let rest before slicing into bite-sized pieces.
  4. Layer half of the sliced potatoes in the baking dish, followed by half of the sour cream, cheddar cheese, and steak pieces. Repeat layers.
  5. Cover with aluminum foil and bake for 45 minutes. Remove foil during the last 10 minutes to brown the cheese.
  6. Serve warm with extra sour cream drizzled on top.
