  • 9 no-boil lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 1 cup sliced cremini mushrooms
  • 1 medium zucchini, thinly sliced
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a large baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic for 1 minute, then add mushrooms and zucchini. Cook until softened, about 5 minutes. Stir in spinach until wilted. Season with salt and pepper.
  3. In a separate bowl, mix ricotta cheese with salt and pepper.
  4. Layer the baking dish: spread marinara sauce on the bottom, followed by three noodles, half the ricotta mixture, half the sautéed veggies, and a sprinkle of mozzarella. Repeat layers once more.
  5. Finish with another layer of noodles topped with marinara sauce and remaining mozzarella. Cover with foil.
  6. Bake for 45 minutes; remove foil for the last 10 minutes to brown cheese.
