Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, chopped nuts, cinnamon, and salt.
  3. In another bowl, whisk together pumpkin puree and maple syrup until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until all oats are coated.
  5. Spread the mixture evenly on the baking sheet and bake for 25-30 minutes, stirring halfway through for even browning.
  6. Allow to cool completely before storing in an airtight container.
