  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt, pepper, and half of the oregano; place them in the baking dish.
  3. Arrange sliced zucchini and halved cherry tomatoes around the chicken.
  4. In a small bowl, mix olive oil, minced garlic, balsamic vinegar, and remaining oregano; drizzle over chicken and vegetables.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
  6. Serve hot, drizzling any leftover sauce from the pan over each plate.
