Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced into half-moons
  • 1 medium red onion, thinly sliced
  • 4 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a large baking sheet.
  2. Wash and slice the zucchini into half-moons, thinly slice the red onion, and halve the cherry tomatoes.
  3. Arrange the salmon fillets in the center of the baking sheet; surround them with zucchini, cherry tomatoes, and red onion.
  4. Drizzle olive oil over all ingredients. Squeeze fresh lemon juice on top and sprinkle with minced garlic and oregano. Season with salt and pepper.
  5. Bake in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork.
  6. Serve immediately, drizzling any remaining pan juices over each plate for added flavor.
