  • 4 medium Yukon Gold potatoes, chopped
  • 4 medium carrots, chopped
  • 2 medium yellow onions, quartered
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Chop potatoes, carrots, and onions into large chunks.
  2. In a skillet over medium-high heat, sear the beef chuck roast for 4-5 minutes on each side until browned.
  3. Layer chopped vegetables in the bottom of the crockpot; place the seared roast on top.
  4. Pour in beef broth until nearly covering the roast. Add minced garlic and sprinkle herbs over everything.
  5. Cover and cook on low for 8 hours or high for 4 hours until tender.
  6. Serve with sauce from the crockpot and garnish with fresh parsley if desired.
