  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup orzo pasta
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 cups low-sodium chicken broth
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt, pepper, and half of the dried herbs.
  3. In a skillet over medium-high heat, heat olive oil and sear chicken for about 5 minutes on each side until golden brown.
  4. In a bowl, whisk together soy sauce, brown sugar, minced garlic, and remaining herbs.
  5. In a baking dish, spread cooked orzo and diced peppers evenly; place seared chicken on top and drizzle with the sauce.
  6. Cover with foil and bake for 20-25 minutes until heated through.
