  • 2 large fresh oranges (zested and juiced)
  • 1 medium onion (sliced)
  • 4 cloves garlic (minced)
  • 1 cinnamon stick
  • 2 tsp ground cumin
  • 2 tsp sweet paprika
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil

Instructions

  1. Prep the chicken by trimming excess fat; slice onions, mince garlic, and zest one orange.
  2. Heat olive oil in a large pot over medium heat. Sauté onions until translucent, about 5 minutes. Add garlic, cumin, and paprika; cook for an additional 2 minutes.

  4. Squeeze juice from half the zested orange over the chicken; add broth and cinnamon stick.
