  • 1 cup pumpkin puree
  • 2 large eggs
  • â…“ cup vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, eggs, vegetable oil, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined (do not overmix).
  5. Spoon batter into muffin cups until three-quarters full. Optionally add chocolate chips or nuts on top.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool slightly before serving.
