  • 1 medium head Napa cabbage (about 1 pound), chopped
  • 1 cup carrots, sliced thinly
  • 1 cup bell peppers (red or yellow), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Wash and chop the Napa cabbage into bite-sized pieces. Slice the carrots and bell peppers thinly.
  2. In a small bowl, mix soy sauce, sesame oil, and cornstarch mixture until smooth.
  3. Heat a large skillet or wok over medium-high heat and add a splash of oil.
  4. Sauté garlic and ginger for about 30 seconds until fragrant.
  5. Add chopped vegetables to the skillet and stir-fry for about 5 minutes until tender-crisp.
  6. Pour in the sauce and stir well for another 2 minutes until everything is coated and the sauce thickens.
  7. Serve hot over rice or noodles as desired.
