  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 4 oz cream cheese (softened)
  • 1 cup powdered sugar

Instructions

  1. 1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. 2. In a bowl, whisk together oats, flour, baking soda, and salt.
  3. 3. In a separate bowl, beat softened butter with brown and granulated sugars until fluffy.
  4. 4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. 5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. 6. Drop spoonfuls of dough onto prepared sheets about two inches apart and bake for 10-12 minutes until golden brown around the edges.
  7. 7. For the filling, whip cream cheese and powdered sugar until smooth.
  8. 8. Once cookies are cool, spread or pipe the cream filling between two cookies.
