Ingredients

Scale
  • 4 medium russet or Yukon Gold potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes, then chopping them into bite-sized pieces. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, melt the butter. Add onions and sauté until translucent (about 5 minutes). Add garlic and cook for an additional minute.
  3. Stir in the diced potatoes and pour in the vegetable broth. Bring to a boil, then reduce heat to simmer for about 20 minutes or until potatoes are tender.
  4. Blend the mixture until smooth using an immersion blender (or transfer to a regular blender). Leave some chunks for added texture if desired.
  5. Return blended soup to low heat and stir in heavy cream. Warm through without boiling.
  6. Season with salt and pepper to taste, then serve hot with optional garnishes like chives or bacon bits.
