  • 1 lb lean ground turkey
  • 1 cup orzo pasta
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup bell peppers, diced (mixed colors)
  • 2 cups fresh spinach
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the diced onion and minced garlic until fragrant (about 3 minutes).
  2. Add ground turkey; cook until browned (5-7 minutes), breaking it apart.
  3. Mix in the bell peppers and dried herbs; sauté for another 2-3 minutes.
  4. Pour in the chicken broth and add the orzo. Stir well and bring to a simmer.
  5. Reduce heat to low, cover, and cook for about 10 minutes until orzo absorbs most of the liquid.
  6. Fold in fresh spinach until wilted (about 2 minutes). Serve hot with grated Parmesan on top.
