Instructions

  1. In a large pot over medium heat, cook the bacon until crispy. Remove and let drain on paper towels.
  2. In the same pot with bacon grease, sauté the diced onion until translucent. Add minced garlic and stir until fragrant.
  3. Add diced potatoes and chicken broth; bring to a boil. Reduce heat and simmer for about 20 minutes until potatoes are tender.
  4. Blend the soup until smooth using an immersion blender or by carefully transferring it to a standard blender.
  5. Stir in heavy cream, season with salt and pepper, then add crumbled bacon (reserve some for garnish). Serve topped with chopped green onions.
