  • 1 Ribeye or Sirloin Steak (1 inch thick)
  • 1 tsp Kosher Salt
  • ½ tsp Freshly Ground Black Pepper
  • 2 tbsp Olive Oil
  • 2 tbsp Unsalted Butter
  • 2 sprigs Fresh Thyme or Rosemary
  • Lemon Wedges for serving

Instructions

  1. Remove the steak from the fridge and let it come to room temperature for about 30 minutes. Pat dry with paper towels.
  2. Generously season both sides of the steak with kosher salt and black pepper.
  3. Heat a heavy skillet over medium-high heat until smoking hot. Add olive oil and let it shimmer.
  4. Sear the steak for about 4 minutes without moving it, allowing a crust to form.
  5. Flip the steak using tongs, adding butter and herbs to the pan. Baste the steak with melted butter for added flavor.
  6. Cook for another 3-5 minutes depending on desired doneness (130°F for medium-rare).
  7. Transfer to a plate, rest for 5 minutes, and serve with lemon wedges.
