  • 4 cups stale bread cubes
  • 1 cup low-sodium chicken broth
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 2 large eggs
  • 2 tsp fresh parsley, chopped
  • 1 tsp fresh sage, chopped
  • 1 tsp fresh thyme, chopped
  • 1/2 tsp fresh rosemary, chopped
  • 3 tbsp unsalted butter (for sautéing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Toast stale bread cubes on the baking sheet for about 10 minutes until crisp.
  3. In a skillet, melt butter over medium heat; add onion and celery. Sauté until soft, about 5 minutes. Add herbs in the last minute.
  4. In a large bowl, mix toasted bread cubes with sautéed vegetables. Gradually pour in chicken broth until moistened but not soggy. Stir in eggs until well combined.
  5. Form the mixture into golf ball-sized balls and place on the prepared baking sheet.
  6. Bake for 25-30 minutes until golden brown.
