  • 3 lbs chuck roast
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, quartered
  • 2 large sweet onions, sliced
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season the chuck roast generously with salt and black pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned (about 4-5 minutes per side), then remove from pot.
  4. Add onions and garlic to the pot; sauté until softened.
  5. Return the roast to the pot, adding chopped carrots and potatoes. Pour in beef broth until it covers half of the roast.
  6. Top with thyme and cover with the lid. Transfer to the preheated oven and slow cook for approximately 3 hours or until fork-tender.
  7. Serve drizzled with juices from the pot.
