  • 1 ripe avocado
  • 2 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro
  • Salt and pepper to taste
  • 2 tbsp chili sauce (for dipping)

Instructions

  1. 1. Prepare the Prawns: Heat a pan over medium heat with a splash of oil. Season the prawns with salt and pepper, then cook for 3-4 minutes until pink and opaque.
  2. 2. Make the Guacamole: In a bowl, mash the avocado and mix in lime juice, chopped cilantro, salt, and pepper until combined but still chunky.
  3. 3. Soak Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper for about 10 seconds or until pliable. Lay it flat on a clean surface.
  4. 4. Assemble Wraps: Place cooked prawns and a dollop of guacamole on one side of the rice paper. Optionally add extra veggies like shredded carrots or sliced cucumbers.
  5. 5. Roll It Up: Fold in the sides of the rice paper and roll tightly from one end to another.
  6. 6. Serve: Plate the wraps and serve with chili sauce for dipping.
