Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • Zest and juice of 1 fresh lemon
  • 1 cup fresh raspberries (or frozen)
  • 1 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Add the egg, lemon juice, and lemon zest; mix until combined.
  3. In another bowl, whisk together flour, baking powder, and a pinch of salt. Gradually add to the wet mixture until just combined; be careful not to overmix.
  4. Gently fold in the raspberries, ensuring not to crush them too much.
  5. Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart.
  6. Bake for 12-15 minutes until edges are golden but centers remain soft. Cool slightly before transferring to wire racks and dust with powdered sugar.
