  • 2 cups orzo pasta
  • 3 cloves fresh garlic, minced
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
