  • 1 ripe avocado (about 200g)
  • 1 orange (about 150g)
  • 1 grapefruit (about 200g)
  • 3 tbsp extra virgin olive oil (45ml)
  • 1 tbsp balsamic vinegar (15ml)
  • 1 tsp honey (5g)
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes until tender.
  2. While the beets are roasting, peel and segment the orange and grapefruit; set aside.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
  4. Once cooled, peel the beets, slice them into wedges or cubes, and arrange them on a serving plate with sliced avocado and citrus segments.
  5. Drizzle the dressing over the salad and garnish with fresh herbs before serving.
